Ingredients
1/2 cup rolled oats (for the “ladyfinger” base)
- 1 tbsp chia seeds
- 1/2 cup coconut water
- 2 tbsp strong espresso (cooled)
- 1/2 tsp vanilla extract
- 1/2 cup coconut yogurt (unsweetened or vanilla-flavored)
- 1 scoop CHEERi Chocolate Superfood Powder
- Cinnamon (for dusting)
-
Optional: Dark chocolate shavings or cacao nibs for garnish
🧑🍳
Instructions
-
Make the oat base (5 min active)
-
In a small bowl, combine oats, chia seeds, coconut water, espresso, and vanilla.
-
Stir well and let sit for 10–15 minutes (or overnight) to allow chia to gel and oats to soften.
-
Create the CHEERi cream layer (2 min)
-
In another bowl, mix coconut yogurt with 1 scoop CHEERi until smooth and rich brown.
-
Taste and adjust sweetness if needed (add a drop of maple syrup or monk fruit if your yogurt is unsweetened).
-
Assemble the layers (3 min)
-
In a small jar or dessert glass, spoon in half the oat mixture as your base.
-
Add a layer of the CHEERi yogurt mix.
-
Repeat with remaining oats and top with the rest of the CHEERi layer.
-
Dust + chill (2 min + 1 hr chill)
-
Dust cinnamon on top. Optionally, add cacao nibs or dark chocolate shavings.
-
Chill in the fridge for 1 hour so it sets like tiramisu.
